Herbed BBQ prawns
  1. ¼ cup coarsely chopped coriander
  2. 1/4 cup coarsely chopped mint
  3. 2 tbs coarsely chopped flat-leaf parsley
  4. 2 tbs chopped oregano
  5. 1 garlic clove, crushed
  6. 1/4 cup (60ml) white wine vinegar
  7. 1/4 cup (60ml) extra virgin olive oil
  8. 1.5kg King Prawns, peeled leaving tails intact, deveined
Step 1
  1. Combine the coriander, mint, parsley, oregano, garlic, vinegar and oil in a medium bowl. Season.
Step 2
  1. Place the prawns in a large bowl. Add 2 tbs of the coriander mixture and toss to combine.
Step 3
  1. Heat a barbecue grill or char grill on medium-high. Cook the prawns, in batches, turning occasionally, for 5 mins or until prawns curl and change colour. Transfer to a serving platter. Drizzle with the remaining coriander mixture to serve.
